I completely understand that the idea of packing up a healthy lunch to go can be overwhelming. Just remember that simple really is better.

Leftovers are my personal preference for healthy, on the go next day lunches. Most leftovers can be eaten either at room temperature or even cold.

One of the main healthy eating concepts I utilize and recommend is the “cook once, eat two or three times” principle which means when you cook food, cook extra to use for healthy meals later in the week. If you aren’t the kind of person who enjoys leftovers, just know that you’ll have to do a little more work to prep an on the go lunch.

Learn to utilize the “cook once, eat two or three times” concept.

For when you don’t have leftovers on hand, I recommend finding a few healthy lunch ideas that you love such as sandwiches, wraps or salads, and keeping the ingredients for those in your refrigerator and your pantry at all times in case you need to go to them in a pinch.

Add these items to your weekly grocery list:

– a few of your favorite veggies and fruits,

– a few healthier condiments like hummus, dijon mustard and Kite Hill dairy-free cream cheese spread (the Everything flavor is my favorite!)

– a couple of healthy bread options (I love Food For Life’s sprouted english muffins and Silver Hills Bakery’s sprouted bagels and breads).

Finally, invest in a few pieces of high quality on the go meal containers. I have the Tellfresh 900 ml oblong containers from The Container Store and I love them. They’re sturdy and dishwasher safe, and the lids are airtight. I will add that I always recommend against microwaving in plastic so if you’re planning to reheat your food, be sure to choose a glass food storage container for reheating.

7 ON THE GO LUNCH IDEAS

 

1. PASTA WITH GREENS, HUMMUS AND OLIVES

 

Prep ahead: pasta. This is an incredibly easy and delicious on the go lunch idea that will fill you up and give you tons of energy. Toss precooked pasta with a handful of spinach (just quickly heat it in a skillet with a bit of butter or olive oil if the cooked pasta is sticking together), then add the pasta to your to go container with a scoop of store bought hummus on top, sliced kalamata olives and a sprinkle of pine nuts or other seeds. Add sea salt and pepper, pop the lid on and you’re ready to go. This pasta salad is perfect served cold.

2. EASY CAESAR SALAD

Prep ahead: toasted english muffin croutons. A delicious and filling salad is always a good choice for a healthy, on the go lunch. This salad uses a cleaner store bought salad dressing, but feel free to make your own homemade salad dressing if you have a favorite. Click here for the full recipe.

 

3. ROASTED AND LOADED SWEET POTATO ROUNDS

 

Prep ahead: roasted sweet potato rounds. Top these sweet potato rounds with your favorite fresh veggies and canned beans and some mashed avocado or salsa on the side. Click here for the full recipe.

 

4. TOASTED BAGEL WITH CREAM CHEESE AND VEGGIES

 

Prep ahead: toasted bagel or other favorite bread. I like to think of this as a cleaner version of the veggie sandwich I used to eat from Subway. Spread on a healthier cream cheese (my favorite is the Everything dairy-free cream cheese from Kite Hill) and pile up your sandwich with your favorite Subway veggies. My recs: red pepper strips, red onion, spinach, olives and sprouts. This would also be delicious in a whole wheat wrap.

 

5. EGG AND AVOCADO SANDWICH

 

Prep ahead: egg however you like it (fried, boiled, scrambled, etc) and toasted english muffin or bread. This is another variation of an easy, classic sandwich that can be packed ahead and taken on the go. Load up your toasted bread with a smear of dairy-free cream cheese, mashed avocado, the egg you’ve prepped and a few microgreens or baby spinach leaves. This could also be made in a whole wheat wrap.

 

6. POTATO SALAD

7. SWEET POTATO, YOGURT AND FRUIT BOWL

 

Prep ahead: roasted sweet potato rounds. Who says lunch has to always be savory? Sometimes I switch it up at lunch and do a yogurt and fruit bowl and I love to add a few of my favorite Cinnamon Roasted Japanese Sweet Potato rounds to the bowl (click here for the recipe). To make it, start with about 1/2 cup or so of yogurt of your choice (I recommend plain Greek yogurt or a plain coconut milk yogurt for a non-dairy choice), add a few slices of roasted sweet potatoes, some seasonal fruit, a sprinkle of nuts (almonds, walnuts, pistachios, etc) and a drizzle of honey.
