Elizabeth’s Favorite No Oil Baked Fries With Smoky Avocado Whip

One of my favorite things to do in the kitchen is to find healthier ways to make my favorite foods. From enchiladas to non-dairy ice cream to chocolate superfood treats…there’s a way to make any food you love into a healthier version. And french fries are no exception.

NO-OIL BAKED FRIES

Ingredients:

  • 4 medium red potatoes, scrubbed well and cut into 1/2-inch wedges
  • Parchment paper for roasting (I use the If You Care unbleached parchment baking sheets)

Directions:

Preheat oven to 400 degrees. Place parchment paper on a large baking sheet (I prefer one with a rim around the edge to keep things from sliding off).

Place the potato wedges onto the parchment paper, and roast for about 40 minutes, checking the fries a couple of times to make sure they’re roasting evenly. Sprinkle with sea salt and garnish with a bit of fresh cilantro if desired, and serve with Smoky Avocado Whip. 

 

SMOKY AVOCADO WHIP

Ingredients:

  • 2 medium ripe avocados
  • 4 ounces of Kite Hill Plain Cream Cheese Style Spread (found at most natural grocery stores)
  • Smoked paprika to taste

Directions:

Mash the ripe avocados with the cream cheese in a small bowl. Place the avocado whip in four smaller serving bowls and top each with a sprinkle of smoked paprika (however much you’d like). Serve Smoky Avocado Whip along with the No-Oil Baked Fries.
