I’m always finding inspiration for delicious recipes to make at home. The inspiration for this Mediterranean Veggie Pasta recipe came from my love of a pizza at one of my favorite local restaurants. I was inspired by the combination of ingredients, but I turned it into a pasta dish that’s easy to make on a weeknight because you know I don’t believe weekday meals should be complicated. This dish is filling. It takes less than 20 minutes to prep. It’s plant based. And it’s delicious.

I like to serve this pasta dish with cheese on the side. My family loves it topped with grated parmesan, but I really like mine topped with nutritional yeast for a dairy-free option.

Mediterranean Veggie Pasta Recipe {Vegan, Dairy-Free}

Ingredients:

  • 8 oz farfalle
  • 1 medium yellow or white onion, thinly sliced
  • 4 cloves garlic, roughly chopped
  • 2 Tbsp olive oil
  • 8 oz sliced baby bella mushrooms
  • 10 oz jar artichoke hearts, rinsed and drained
  • 1/2 cup sliced kalamata olives, drained
  • 2 cups marinara sauce (I love Rao’s)
  • 1/2 tsp sea salt
  • 2 big handfuls arugula or other green
  • Cheese of choice for topping, if desired

Directions:

  1. Add the olive oil to a large pan or skillet over medium to medium-high heat, then add the onion and garlic. Sauté for about 5 or 6 minutes or until the onion is translucent.
  2. Add the mushrooms, artichoke hearts and olives to the pan and continue to sauté for about 5 more minutes, watching closely to make sure it doesn’t stick.
  3. Add the marinara sauce and sea salt to the mixture, stir well and lower the heat to simmer. Simmer for about 5 minutes.
  4. Turn the heat off and add the arugula to the mixture. Stir well, letting the heat from the sauce wilt the arugula.
  5. Add the cooked pasta to the sauce and toss everything well. Adjust the seasoning to your tastes. Serve with your favorite cheese on the side.
